Baked Zucchini with Mozzarella Cheese AKA “The New Garlic Cheese Bread”

Baked Zucchini AKA Cheese Bread - MinnesotaFromScratch.wordpress.com

My daughter is a very good eater, especially for being so young. She is excited to try new things and likes foods from all over the world. But one thing she “thinks” she doesn’t like is zucchini. However, when I bake up this “zucchini cheesy bread”, she is suddenly a fan.  I think all she hears is “cheesy bread”.

I started baking zucchini like this last summer over at my grandparents house. They almost always had some fresh zucchini ready to pick each time I visited. It is a great side dish for meals and is a great alternative to garlic bread with an Italian meal. This is a side the entire family will enjoy!

Ingredients (all organic):

  • Zucchini – figure one half per person
  • Olive oil or avocado oil
  • Garlic powder
  • Mozzarella cheese
  • Sea salt and fresh ground pepper to taste

Clean the zucchini, cut off the ends and slice it lengthwise down the middle.

Lightly drizzle olive oil over the  zucchini and sprinkle with garlic powder (I’m pretty generous with the powder).  Then sprinkle some sea salt and pepper (optional). Then top with cheese. I used mozzarella when I made it this time,  but in the past I have used fresh grated Parmesan cheese and even Monterey Jack cheese. It always tastes great, no matter what cheese I’ve topped it with.

Line a baking sheet with parchment paper for quick clean up! Bake it at 375°F for 10-12 minutes, or until the zucchini is tender and the cheese starts to brown.

    I’m trying this! I’m so excited, I’m carb free right now but I LOVE garlic cheese bread so this is perfect! 🙂 I used parm cheese and mozza but I also used minced garlic instead of powdered because we LOVE garlic in this house 🙂 Thanks for the recipe!
